Eleven Eleven Mississippi

Paul and Wendy Hamilton first considered the idea of opening their own restaurant while Paul was directing food and hotel operations for Clipper Cruise Line and Wendy was heading up the marketing department for South Side National Bank. Paul graduated from Penn State University with a BS in Hotel & Restaurant Management and had managed several independent restaurants as well as food & beverage operations at Walt Disney World in Florida. Wendy graduated from Southwest Missouri State with a marketing degree and had previously worked in the hospitality industry for several years. They were both well aware of the time, effort and commitment it would require to operate a restaurant like Eleven Eleven Mississippi.

The location for Eleven Eleven was discovered in early February 2003. Once a part of the International Shoe factory, the restaurant portion of the complex was used to produce heels for women’s shoes. The space that existed was unrecognizable as anything but a shell of the building that had once existed. While many of those consulted thought the building required too much work to bring it to the level necessary to operate a first class restaurant. Paul and Wendy recognized the potential the space had to become one of the most uniquely designed restaurants in St. Louis. In addition, the charm of the Lafayette Square neighborhood and its close proximity to Downtown and all four major highways made it an ideal location for their new venture.

Demolition of the space started in August 2003 with construction starting closely thereafter. Despite several set-backs, construction moved along at a brisk pace. Paul & Wendy along with Wine Director Scott Gaghan and Executive Chef Ivy Magruder performed many construction projects on their own each evening as the main construction crew left for the day. All of the tuck-pointing, stone work, wall finishes, painting, wood finishing and most of the furniture was produced or refinished by Hamilton’s crew. The attention to detail conveyed on the building by the opening team is evident in the overall feel of the space as well as the attitudes of those that work here.

The doors officially opened on December 7th, 2003 to an overwhelmed audience of friends and family. Since that time, Eleven Eleven has become one of the most recognized restaurants in St. Louis for delivering exceptional service and innovative cuisine. During its first year the restaurant was included in Zagat’s “America’s Top Restaurants” and was voted “Best New Restaurant” in local publications. Eleven Eleven has since been recognized as “Best Overall Restaurant”, “Favorite Business Lunch”, “Favorite Service Staff” and the wine list has been recognized by Wine Spectator earning the “Award of Excellence” and the Wine Enthusiast with their “Award of Distinction” every year since opening.

In 2012 Paul & Wendy Hamilton were named “Restaurateur’s of the Year” by the Missouri Restaurant Association for their commitment to hospitality and culinary excellence.

General Manager, Bob Colosimo

Robert “Bob” Colosimo was born and raised in Warren, PA and upon graduation from high school attended the Culinary Institute of America, Hyde Park, NY graduating in April 1980.Bob began his traveling career in 1981 joining Holland America Cruise Line sailing on board several oceangoing cruise ships including a world cruise in 1984.In 1984, Bob joined  St. Louis based Clipper Cruise Line as executive chef and eventually became responsible for the entire food service operation for all four Clipper Cruise Line  ships. During this period, Bob had the opportunity to work on passenger river boats in Europe and on the American Orient Express Luxury Train.  Bob also has worked as an adjunct instructor at St. Louis Community College, Forest Park.Bob has been General Manager & Executive Chef for Eleven Eleven Mississippi since September 2008. During this period, Bob has participated in several charity events sponsored by the restaurant and teaches culinary classes at Moulin Events & Kitchen Conservatory.Bob joined the Chefs de Cuisine Association of St. Louis in 1993 and is a Certified Executive Chef and Certified Culinary Administrator. Bob has served on the Educational Foundation Board since 2006 and is currently on the advisory board of St. Louis Community College and The Culinary Institute of St. Louis at Hickey College. Bob has enjoyed competing in several ACF certified competitions in recent years.Bob lives in Crestwood with his wife Lisa and their three children, Patrick, Dominick and Gianna.

 

Trevor Ploeger, Sous Chef

Born and raised in Sioux City Iowa, Trevor attended culinary school in Minneapolis MN at a Le Cordon Bleu school following high school. Trevor moved to St. Louis in 2004 where he began working at Sunset 44 in Kirkwood, quickly working his way up to Head Chef.  After 6 years at Sunset 44, Trevor went to work at Old Hickory Golf Club to work with Ryan Buettner.

With all the experience he continues to gain, Trevor hopes to open his own restaurant.

Trevor and his wife Meghan have a son Collin.

Our wine program focuses on enjoyment as a vital accompaniment to your dining experience but also enhances your knowledge of the world of wine. We are proud to have collected somewhat obscure yet reasonably priced selections.  This list represents grape varietals from various Old World and New World wine regions.  We encourage you to have fun and think outside the box when choosing a wine with your meal.

Scott Gaghan, Wine Sommelier

Scott has been the wine director for Eleven Eleven Mississippi since it’s inception in 2003 and assumed this role at Vin de Set when it opened in 2006 as well.  His experience in the hospitality and wine industry is vast and includes wine sales, fine dining, luxury cruise and vintage rail car operations.  Scott holds a Bachelor of Science and a Masters degree in hospitality management from Johnson & Wales University.  In 2008 he earned a second level sommelier certification through the International Court of Master Sommeliers.  The wine lists Scott maintains at both Eleven Eleven and Vin de Set have achieved the “Award of Excellence” from The Wine Spectator and the “Award of Unique Distinction” from the Wine Enthusiast.  Ultimately, Scott’s goal at each restaurant is to enhance the guest experience through the enjoyment of wine and impart a bit of knowledge in the process.
